For Bread Lovers Everywhere
I love to bake. So when I'm not on my computer, there's a good chance you'll find me in the kitchen. Of course, I love cakes and pies, but I'd have to say that baking savory and sweet breads are my favorite. After spending many years living in Europe, when I catch the aroma of freshly baked loaves of bread, hot from the oven (or bread machine), it's more than just a familiar smell. It conjures happy memories from my childhood and earlier adult days abroad.
There's definitely something special about bread. If I were left on a deserted island and had to choose which few items I could carry with me, bread would definitely be at the top of my list. In the early 1990s, I was living in Germany for the second time, but I couldn't speak much German. However, living among the locals in Mannheim and Illesheim, I had a few standby, broken phrases to get me through. By this point, I'm sure you've got an inkling as to what one of those might be: “Ein bauernbrot und ein brötchen, bitte.” (One loaf of rye and one brötchen, please.) After my biweekly visit to the bakery, off I'd wander and window shop, heading back towards home while happily munching on my brötchen (a.k.a., favorite treat).
I've been back stateside for a long time, but I still miss those trips to the local bäckerei. I've found some nice specialty bakeries over the years, but they're never quite the same. A couple of years ago, I started baking bread at home. I knew I had to come up with a recipe that would satisfy my husband's desire for the soft, squishy bread he had grown up on, while also appeasing my own desire for the crunchy-on-the-outside, soft-on-the-inside variety I'd fallen in love with as a child in Stuttgart. After some trial and error (though mostly more errors than successes), I landed on what would become a quick family favorite. And since our Scrap Girls community is so much like family, I'm sharing it with you today in case you happen to be a bread lover, too.
Basic White (Millet) Bread
Yields: (1) 2-lb. loafIngredients:
- 1 1/3 cups water
- 4 1/4 cups unbleached bread flour
- 4 tablespoons sugar
- 2 tablespoons dry milk or dry soy milk
- scant tablespoon of coarse kosher salt
- 4 tablespoons salted butter, cubed
- 2 teaspoons active dry yeast
- 1 tablespoon oat bran
- 2 tablespoons millet
Instructions:
Layer all ingredients in a bread machine and bake according to manufacturer's recommendations. I have the large Zojirushi and use the basic white bread cycle with a medium crust. If you don't have a bread machine, you can adapt this recipe for non-machine baking. It works nicely in a standard bread pan, Pullman pan, and others.
Note: I use King Arthur unbleached bread flour and Land O' Lakes Salted Sweet Cream Butter (not margarine).

Creative Cards Chat

High Noon Crop
Wednesday, November 7th - 12 Noon ET
Join April (April Showers) each Wednesday at 12 Noon ET for the High Noon Crop. All coasts and time zones are welcome! These crops are designed to allow you to work on your own photos and themes, simply giving participants a one hour goal and a fun, new challenge each week.
On November 7th, we'll have a Color Challenge! Create a layout using the rich warm tones of autumn.
Create your layout and upload it to the special High Noon Crop Gallery. You'll be amazed what you can get done in just one hour, but there is no High Noon Sheriff timing you! Hope to see you in the chat room!
November's Forum Game: Products Picks Game
This November, we are playing the Products Picks game where we encourage you to stroll through the aisles of the boutique and do a little window shopping.
Each Monday through Saturday in November, a member of the Welcoming Committee will post the name of one or two product designers in this Product Picks game thread. You will then head to the Scrap Girls Boutique and navigate to that particular designer's product pages. Choose any of their products (your favorite product, one you like, or one you wish you owned), then head over to the Product Picks game thread and share the product name, boutique link, and a brief explanation of why you chose that product.
At the end of the month, members who haves posted links to 41 products (one for each designer) will be entered in a drawing for one of three $10 Gift Certificates. Members who have posted links to 16-40 products will be entered in a drawing for one of two $5 Gift Certificates. And members who have posted links to 10-15 products will be entered in a drawing for one of two $3 Gift Certificates.
