Note from Ro: My husband and I love green chilies. We love chicken. We love cheese. We love cornbread. This recipe, found in the Scrap Girls Blog, has to be a major hit in my house!

Mexican Chicken Skillet Recipe

1 cup sour cream
1 (10 3/4-oz.) can cream of chicken soup, undiluted
1 (4-oz.) can green chilies, diced and peeled
1 chopped onion
2 1/2 cups cooked chicken, diced
2 (6-oz.) pkgs. yellow cornbread mix
Milk, as specified on cornbread mix instructions
1 cup grated cheddar cheese
2 cups corn tortilla chips, slightly broken
1 cup grated Monterey Jack cheese with jalapeños

Heat oven to 400°F. Grease a large cast-iron skillet.

Combine sour cream, soup, chilies, onions, and chicken.

Stir milk into cornbread mix, following the instructions on the packages. Add grated cheddar cheese to the batter.

Cover the bottom of the skillet with the broken tortilla chips. Sprinkle the grated Monterey Jack cheese over the chips.

Spread sour cream and chicken mixture over the cheese and chips.

Carefully spread your cornbread batter over the chicken layer.

Bake at 400°F for 25 to 30 minutes or until cornbread is golden brown. (Note: When I used the 8-oz. packages of cornbread, it took 45-50 minutes to cook the cornbread to a golden brown.)

Makes 6-8 servings.

ScrapSimple Paper Templates

Let's talk a little bit about ScrapSimple Paper Templates digital scrapbooking tools. They are such a cool way to personalize your layouts. You choose the colors you want to use, and you combine the templates in various ways. With paper templates, you can create a subtle background or one that is bold and vibrant.

I love the texture in the third paper from ScrapSimple Paper Templates: Country Family Tree. To get the paper the color that I wanted, I used the Adjust Hue/Saturation Tool. I had a brown color selected as my foreground color. When I pulled up the Adjust Hue/Saturation Tool, I chose the "Colorize" option, and I moved the saturation and lightness sliders until I reached the creamy/tan shade that I was looking for.

I used one of the papers from ScrapSimple Paper Templates: Darling Biggie to add a pattern to the tan paper that I created. First, I used the dark brown color that was previously selected as my foreground color. I created a blank layer above the Darling paper and filled it with the brown. Then I clipped the brown layer to the Darling paper layer (Ctrl+G) then I merged it down (Ctrl+E). This layer was right above the Country Family Tree paper. To blend the Darling paper into the Country Family Tree paper, I played with the Blending Modes and the Opacity level. The look I wanted was achieved with the Blending Mode of "Overlay" and Opacity of 29%.

Now I had the perfect background paper for my layout!

I decided to use a paper from ScrapSimple Paper Templates: Leafery to embellish my layout. To blend with my layout, I changed the color of the template to brown. To color in the leaves, flowers, and birds, I opened up a blank layer underneath the template. I chose a brush from Dynamic Brush Set: Drawing 5701, picked the color I needed, lowered the Opacity of the brush, and then lightly "painted" with the brush. I used different layers for different sections, in case I needed to make changes to a section.

Now, I just add my picture and a few embellishments, and my layout is complete!

APRIL EVENTS

April Message Board Game: Progressive Word Scramble!

The object of the game is to correctly guess the name of a product in the Scrap Girls Boutique by solving clues and unscrambling letters we give you. Each day, you will be given a letter found in the product name as well as a clue. You won't know how many letters are in the product name until it is complete. We will keep giving clues until a correct guess is made.

The designer's name or the word "Collection" are not included as part of the puzzle. Letters from any other words in product names (such as "Biggie," "Brush" or "Transparency") may be given as part of the puzzle.

Be the first to answer it correctly and win a $5.00 Gift Certificate to the Boutique! You are only allowed ONE guess per daily clue, and you are only allowed ONE win per month. When you make your guess, you MUST provide a link to the boutique item you are referencing. We will play the game daily during the entire month of April. When a correct answer is given, the new puzzle will start the following day.

April Monthly Layout Contest: It's time to get your silly on! For this month's layout contest, we want to see layouts featuring the silly or mischievous antics in your life. Let us see the silly faces, crazy clothes and hilarious moments. Create your layout and post it in the April Layout Contest Gallery by Midnight on April 30th. Be sure to list your credits in the description or under the EXIF Properties. If your layout is one of the two chosen, you will win a $10 gift certificate to the Scrap Girls Boutique!

Club Concepts Layout Contest: Post your new layout using the current club selection (either the Scrap Girls Club or the ScrapSimple Club) in our Scrap Girls Club Members Gallery or the ScrapSimple Club Members' Gallery. Be sure to list all of the Scrap Girls products you used.
