Whole Wheat Pumpkin Pancakes

As many of you may know, I am always on the look-out for healthy recipes to replace the unhealthy versions that we used to eat. Whole foods, clean eating, as little unprocessed food as possible — that's what I believe in.

I especially like trying out new recipes for pancakes - healthy alternatives that I can feel good about feeding my boys before sending them off to school. I found a winner in a Whole Wheat Pumpkin Pancake recipe from Spark Recipes, my new favorite site for finding healthy alternatives.

This recipe does take a little work, since it's pancakes made from scratch. I have been doubling the recipe, cooking the pancakes and freezing them. It makes about 70-80 pancakes. It's then a breeze to pull them out of the freezer and heat them up with a little margarine and sugar-free syrup in the morning. The absolute best thing about this recipe is that my boys are getting a healthy serving of a beta-carotene-rich vegetable and fiber-rich whole wheat. Oh, I do add some chocolate chips to the recipe as well. After all, a girl's gotta have her chocolate fix, and it makes them even more appealing to my boys!

Whole Wheat Pumpkin Pancakes

2 cups whole wheat pastry flour
4 tsp baking powder
1 tsp baking soda
1/2 tsp ground nutmeg
1/2 tsp ground ginger
1/4 cup brown sugar
1 egg yolk
2 cups skim milk
1 cup canned pumpkin
3 Tbsp apple butter (I used applesauce)
3 egg whites

In a large bowl, whisk together the flour, baking powder, baking soda, and spices.
In a separate bowl, mix together the egg yolk, pumpkin, brown sugar, and apple butter. Stir in milk until blended well.
All at once, add milk mixture to dry ingredients and stir just until combined.
In a medium bowl, beat egg whites until light and fluffy (use a fork, whisk, or electric beater). Fold egg whites into batter.
Ladle batter by 1/4-cup amounts onto a preheated nonstick griddle lightly sprayed with cooking spray. Cook until evenly browned on both sides.

Recipe makes 20 pancakes (when the 1/4-cup measure is used). I used 1/8 cup.

Brushes

Before I discovered digital scrapbooking, I was an occasional – and admittedly, mediocre – paper scrapper. I just couldn't commit the time and money to all the latest gadgets and tools, much less the pretty papers and embellishments. I was especially impressed by stamps. I loved the look that stamps brought to a page or card, but I was wholly unimpressed by how expensive they were!

Enter digital stamps, also called brushes. They are so easy, so versatile – and best of all, so reusable! Brushes are truly one of the best things about digital scrapbooking. When I first got started, it took me a while to figure out how to use them. But the effort paid off, and now they're one of my favorite digital scrapbooking tools.

When it comes to brushes, I'm especially partial to alpha brushes. They make title work just so easy!

I've seen several new alpha brushes in the Boutique lately, and I'm so excited to check them out. For this article, I used Brush Set: Foam Stamp Alpha Super Biggie. As you can see in this layout, the title has a foam-stamped look that looks pretty darn similar to those pricey "real" stamps that I used to admire!

It's that time again - Posting Contest time! This is where you are rewarded for your flying fingers and chattiness. The contest will run from March 1 when we post the thread to March 31 at 12:00 midnight (MST). We are doing things a little differently this time, so here are the rules:

1) To enter the Posting Challenge, reply in the game thread with your CURRENT post count. This is the number under your Avatar that shows when you post. Do not post the number found on your profile; it is a different number that is calculated differently.

2) During the month, chat your fingers off!

3) On March 31, BEFORE midnight (MST), go back to your original post in the game thread (the one with your starting post count) and take a screenshot of it. Send the screen shot to [email protected]. The screenshot is your contest entry! We will calculate your post count based on the numbers on the screenshot. (Directions for taking screenshots will be posted in the game thread.)
