Here's a super easy dinner idea that my family enjoys:

You will need:

Tortillas
Shredded Cheese
Cooked and shredded chicken
BBQ Sauce
Sliced Onions

Lay a tortilla on a hot, lightly greased griddle or frying pan. Sprinkle a bit of cheese on one half of the tortilla. (Our tortillas were a small burrito or large soft taco size, so I used about 1/8 cup of cheese.) Place some of the shredded chicken on top of the cheese and then onions on top of that. Add a bit of BBQ sauce. (A little goes a long way.) We use a bottle variety and I just pour directly from the bottle. Top with a bit more shredded cheese (another 1/8 cup or so).

Fold the tortilla half that wasn't layered with ingredients over the part that is. Allow it to brown and the cheese to melt and then carefully flip it over and allow the other side of the tortilla to brown and let the cheese melt completely.

Remove from the heat, cut into wedges and serve. I continue this process for each quesadilla.

If you prefer, this can also be easily made in a microwave.

Papers

When I was into paper scrapbooking, I loved to collect papers. I would go through my stash and often think, "If I could only combine this paper with that paper, I'd have exactly what I want for my layout!" The beauty of digital scrapbooking is that I can combine papers to get exactly what I want.

The example below shows how I use Blending Modes, Opacity and several papers to achieve a unique look. I wanted a musical and urban grunge theme for the layout so I used Shalae Tippetts' Structures Papers and Amanda Sok's Interlude Paper Mini.

The key is to experiment! Blending Modes and Opacity will have different effects on papers and photos because of texture, color and lighting. Just play around and enjoy the creative process. You'll be amazed at the fabulous things you will create with papers from Scrap Girls!

October Monthly Layout Contest: You might be a city girl or maybe a country girl, but even those that live in the city can enjoy time spent in the country. For the October Layout Gallery Contest, we want you to scrap a page about time spent in the country. It could be a visit to a farm, or a state or national park, or maybe you live in the country. Create your layout and post it in the October Monthly Layout Contest Gallery by Midnight on October 31st. Be sure to list your credits in the description or under the details tab.
